🇲🇦 Moroccan Harira | Soups So Good It Can Cure Any Sickness Ep. 15 INGREDIENTS: - 500g of lamb shoulder, cut into small cubes - Oil for frying - 1 large onion, chopped - 6-10 garlic cloves, chopped - 3 tbsp of tomato paste - 2 tsp of ginger - 1 tbsp of ground turmeric - 1 tsp of cinnamon - 1 tsp of ground cumin - ¾ cup of chickpeas - ¾ cup brown lentils - Beef broth as needed - crushed tomatoes - 1 celery stalk (with leaves), finely chopped and cubed - 1 bunch of cilantro, chopped - 1 bunch of parsley, chopped - Flour slurry - Salt & pepper to taste - 1u002F2 cup broken vermicelli *all measurements are estimates. cook and season with your ❤️ INSTRUCTIONS - Heat the oil in a pot. Add in lamb and sear until browned. remove and set aside. - Stir in the onion, garlic, and add back your lamb. Add tomato paste and stir until well combined before adding celery and leaves along with the spices. - Add lentils, chickpeas, crushed tomatoes, and beef broth until the pot is full. let cook for about 40 mins or until lentils are soft. - Add your cilantro and parsley and vermicelli noodles. Season with salt and pepper. cook for about 15mins. - add your flour slurry to thicken the soup. - Serve with a squeeze of lemon and enjoy!
